this may seem like a silly question, but i'll ask it anyway...
besides photoshop - how do you take black and white photos on the eos d30?
apologies if this seems a stupid question.

Not a stupid question at all.
However, you've answered it yourself really - postprocessing is the only way.
BTW, can I assume that you got your "psychedelic colours" problem sorted OK?

does that mean I cant do bw with my 10d until post processing....?

Black & white with 10D only post-processing. I use it when i just can't right skin tones, on occasion.

That's what it means.
Your 10D came with Photoshop Elements 2.0 - a fabulous image editor, not as complex as it's Big Brother/Sister PS 7. Although I haven't used it, I've heard it comes with a good help/tutorial that should walk you through B&W effects and a host of others.
