I have a S1 IS and I was wondering how to get a really shallow depth.

Aperture Priority, smallest possible F-number, zoom out to 8x or 10x, and use a tripod, depending on the lighting conditions. I have taken a couple with my S2IS along the same lines, and the results are similiar.

It is worth noting that a really shallow DOF is difficult to achieve with these small cameras. That is best achieved with larger lenses, particularly DSLRs. On the other hand, I've found that small cameras work great for shots requiring great DOF.
