I have:

My favorite is "Shazam" I use it all the time

"qik video pro" because I had a iphone 3G before that didn't have video (i have the 4 now so I don't need it anymore)

"photo booth+"
and "Hipstamatic"...because they are fun cameras to play with

"kindle" amazon reader thing

"doodle jump" most addictive game ever

and

iperiod (but unless you are female you probably don't want this one..or want to know what it is)

actually I don't have as many as I thought I did. I have erased a lot of them.

Photography related, I love Instagram. Wish it were higher quality, but the aesthetic quality's worth the degradation from JPEG compression and what not. It's super fast with their recent update too.

I use Maplets for navigation when I'm at Yosemite or wherever, and 360 Panorama is cool for 360 panos you can send to people and have them view it in their browser. Quality isn't great but for what it does, it works very well.

Evernote is great for everything, including photography. Super useful note taking tool that'll change the way you remember things.

As for other apps, I have on my touch screen MobileRSS, NYT in Newstand, Dictionary, Facebook, Meebo, iStudiez Pro, and Pocket Informant.

Pro HDR is really useful, I use it a lot.
Camera+ is good.
SlowShutter and MagicShutter are fun to play with.
CameraLight is very handy for doing night shoots too :)

These reflect my interests for the most part, I've categorized them slightly to help you determine if you would be interested.

For gereral use: Dragon dictation, WolframAlpha, atomic web

Document writing: pages (works good with dragon dictation for document writing while driving)

Finance: pretty much evey bank / credit card company has an app that is good for bill paying, checking balance, moving funds et cetera

Games: angry birds, doodle jump, rag doll blaster

Bible: olive tree bible reader, logos, blue letter bible

Meebo is good if you use MSN/AIM messenger etc
Fring is good for VOIP calls
Remote if you have an Apple TV or similar
Photosynth- stitches together panaroma shots
WiFi Photo tansfer
GIF Shop - create GIFs. Funny for Facebook when drunk
