Since going digital in large part, I've been archiving image files on CD-R. The thought crossed my mind to scan and archive along with the images any model releases, contracts, or other legally binding documents to the same CD as well. Any original hard copies would be filed away for safe keeping as I have done in the past.

As a matter of convenience if I need to use any of these documents, would a scanned version (PDF or JPG), printed or otherwise, be as valid or legal as the original hard copy?

Not sure this answers your question fully, however Shutterstock (a web based photo stock library) accept an electronic copy of a model release with your submission.
Also I would check your local records office / gov't archives as to the local legislation as to what is determined to be an "original" as there is a shift in the thinking on this but will vary from place to place.
