Can anyone recommend software to merge two or more images together? I have 'played' with Photo Stitch that was supplied with the 10D, results were passable but not quite up to my expectations.

Photo Stitch works pretty good as long as you make sure that you set the focal lengths correctly. With any panoramic image you are better off not shooting wide angle to avoid the distortions from the lens. Use a zoom about halfway between extremes to make the panoramas. This will definitely require more stitching but will give much better results. If they still do not look that great use photoshop to fix up the bad spots.

Ahh, the trick is this:
Shoot the scene vertically..in lower res mode...smallest pix is ok. Then- overlap the images by as much as possible. 30% would be good. Lastly, you should meter on the middle of the scene and then exposure lock (AELOCK) so the exposures will match.
Photostitch is the bes pano software I've used..seamless.

I recently used Photostitch to stitch 4 shots of Yosemite Valley and was very pleased with the results. These were taken horizontally (sorry Bob), handheld with my 19-35mm lens at 19mm (actually much higher than 19 given 1.6x CCD). Here's a link:

I've had good results with Photovista, on wintel. It's now sold by a company called iseemedia. They recently released a Mac version but it's awful.

Where can we find more info about VR Worx? Google returns almost nothing.

I recently posted some pano tips and links on another site -- have a look here:

Don't miss seeing Max Lyons site, he's the master of stitching: http://www.tawbaware.com/maxlyons/

I have got some good results with photostich but you do need a reasonable overlap (1/3) which means taking a lot of shots.
If you want a fisheye effect use a wide angle lense and play around with the setting for lense focal length in Photostitch. For a more natural effect use a equiv focal length of around 70mm (I use 50mm on the zoom).
If you do a full 360, the file sizes can get very big (80mb+) so you need a powerful computer with lots of memory.

I have read excellent things from George Lepp about ArcSoft's Panorama Maker, and recently purchased a copy. No chance yet to try it, but I'm looking forward to the results. That's another option.
