Can a D30 be used with any of the high quality spotting scopes used in birdwatching?? Does cannon make any adapters?? I suppose the same question applies for adapters for telescopes,

From telescope supply stores - you can get a T-ring for your camera (in this case Canon mount) and a t-adapter. This allows you to connect the camera (in this case D30) to a telescope.
I have a 8" SCT scope which is a F6.3 / 1280mm lens.
The only problem is the scopes size (8" in diameter) and weight. (can only be used on it's very heavy tripod.
Or I can use my 80-200 2.8 L Canon Lens.
which becomes a max 320mm lens on with the D30 1.6x multiplyer, then with a 2X tele convertor it becomes a 640mm 5.6 lens.
Both work quite well.

I had some 8" SCT pics on the net but that site that I stored them on went down. I've used it primarily for astro photography, and didn't find the D30 excelled in this area. (it photographs like the human eye see's things in the scope, rather than like film see's things).
Had done some shots of Pleides and Orion neb, were ok... nothing striking. I've also done a test shot in daylight (into the woods in my backyard) and was also pretty decent. But it's so hard to maneuver the 8" on my deck (and hard to move it out there) so I find I generally use the 80-200 x 2X tele converter instead.
(this gives me a 640mm 5.6)
The 8" gives me a 1280mm 6.3
The scope images are slightly softer but can be fixed up easily in photoshop.
