i'm still learning my G2. since the camera seems to always default to f2.2 in P mode, many of my shots with varying DOF seem "soft". so, i've been trying to shoot in Av mode at f5.6 or higher but, invariably, all my shots taken that way are too dark. i thought in Av mode, the camera would select a proper shutter speed to achieve correct exposure or am i doing something wrong?

I have had my G2 for about a week and have noticed exactly the same problem. I have been shooting a few pictures at ISO 100 rather than the default ISO 50 and have gotten results that are a little better. I'm planning on buying a 420 EX flash which I hope will alleviate the problem altogether. You are right, the depth of field is not very deep at all when the auto or P mode opts for a wide open aperture.

Your idea of shooting at f5.6 seems like a decent one. Try auto-bracketing with +/-2/3 EV. That way you will get an overexposed shot. I've been doing that with some success.
