i know you select it in the menu, and you can move the slider to how much + - of a compensation you want for the exposure. But... are you meant to take 3 shots, or hold the shutter button down? How does it work exactly?

*bump* I'd like to know this too! My idea of it is that you need to take 3 shots - but unless you have a fast shutter speed, then the pictures will be different each time.... (the composition)...

It depends on the drive mode:
Single shooting - press the shutter button for 3 times.
Continuous shooting - just hold the shutter button down.
For keeping the 3 shots exactly the same, you need a good tripod (or any solid camera support) and shutter release.

so you set the bracketed exposure and your meant to take 3 shots consecutively then? first will be under, 2nd will be normal and 3rd shot will be over exposed?

Correct - take 3 shots. No - the first will be standard exposure, 2nd the -ve underexposed, 3rd the +ve overexposed. And remember to reset the bracketing when finished otherwise the bracketing setting will remain until you turn the camera off.

Actually (for the 20D) the order of -ev,+ev,standard ev can be changed via the custom functions. You can also have the bracketing automatically turned off using the custom function as well.
