I am using a Canon S900 Printer that gives amazingly good color prints, but in all honesty, b & W sucks!
I read somewhere that there are settings in Photoshop that will overcome this, but for the life of me, I can't find them.

Someone please help. I don't want to have to take my old Epson Styles 600 away from my son and family.

How are you printing the black and whites? I assume you are printing colour as black and white by limiting the printer to black and white.

If so there may be some settings in the printer driver to handle this (contrast, brightness...)

For best control, copy your colour photo and create specific black and white rendering of it.

Likely the best results will be by playing with the channels of the RGB image as you turn it black and white (similar to how photographers use colour filters to dramatize aspects of the black and white photo.)

Look in your photoshop manual (or help files) on black and white, there are several different methods to get B&W from colour.
