I do a lot of hiking with my D60 with a variety of lenses
and find it bouncing on my chest too much for my comfort and for the safety of the camera.

Do anyone have experience with some kind of harness
(in the broadest sense) that might work?

I'm not sure if this is what you mean, but Tamrac makes the Expedition Series knapsacks that have D rings built into the pack harness. They sell quick release camera straps that hook on to the pack's D rings, so the camera is attached to the pack and not tugging on your neck.

Try the LowePro - Street and Field range.

They do rucksacks and harnesses (like a soldiers belt) with lots of loops on them and a whole range of pouches and other accessories that clip to the loops.

I have a rucksack that is half camera bag, half ordinary rucksack and I am very pleased with it.

In general Lowe kit and clothing is not cheap but it is very good quality.

also you could try and stitch some velcro to a band of sorts and put that tight around you just above the canera body , it would minimise the amount of travel that the camera has.... the cheapest half solution by far!

I carry my D60 *a lot* out in the field for nature photography. A few years ago, I had purchased a SLR holster from Sundog, but I don't think they are sold anymore. The holster came with back straps and chest buckles and all sorts of rigging. I found that too complex, and it placed the camera directly on my chest, so I can't see my feet, and that leads to stumbles.

Then I threw away the back straps and now carry the holster with its single shoulder strap. That way it rides on my right hip and is fairly ready should wildlife jump in front of me.

Just on Monday, for example, I carried this over 21 miles on mountain trails.
