Channel Mixer is the most often cited tool for converting to a grey scay image - it offers a great deal of control, in an easy to use tool. However, getting rid of the color is just part of the process of creating a good digital Black and white picture.
Try these:

My vote is for ConvertToBWPro, especially if you want it to look more film-like.

I second Wintoid's recommendation for ConverttoBWPRO from http://www.theimagingfactory.com/ It is simple to use, gives good reproducible results. I have used channel mixer also and it works well and would certianly be a good place to start. Dennis

Fred Miranda's BW Workflow Pro (http://www.fredmiranda.com/shopping/BW) would be a much less expensive plug-in option. However, I haven't used it so I'm not sure how good it is, but I remember others here saying they liked it.

I have the Fred Miranda plugin but don't use it as I prefer ConvertToBWPro. What Kennymc describes is the method I used to use prior to ConvertToBWPro, and it's very good. I'd say if you don't care about making the image look like film, Kenny's method is my favourite.
