Can someone break down what bracketing is/does? I am still confused, even after reading a small article/thing on it. Also, how do you set multiple focus points on the Rebel XT? Like you only want certain things to be focues on?

Bracketing is simply taking multiple shots of the same subject at different exposures. (i.e. -1 stop, 0, +1 stop, or -2 stops, -1 stop, 0) There doesn't have to be even spacing, nor do there have to be 3 different exposure values. This can be very useful when shooting a scene which encompasses a higher shadow to high-light range than what the camera can see. Using a tripod and bracketing will allow you to then merge the disparate light values in Photoshop letting you display a picture as you remember seeing it rather than being limited to what the cameras sensor is capable of seeing. There are other uses for bracketing, but for the most part since finishing college the one previously mentioned is what I use bracketing for the most.
I don't think I completely understand your focusing question. I think what you are talking about is letting the camera decide the focus point by selecting all the focus points for your camera, or selecting the point you want. Generally, I use the center point, focus on the subject I want and then reframe the scene. If you are asking about depth of field I would suggest searching that topic because there is a plethora of threads about that. Otherwise if you are asking how to actually change the focus setting on the camera, that should be in the manual and since I don't have an XT, I can't help you beyond that.
