I took this on a very overcast day, had wished there was some sun. I think I still managed to capture the mood of the scene though. Love to here your opinions.

I like the clouds and the bright green blotches of moss (i think that's what it is) in the forground.
It looks like the hills in the background are under exposed. This is really distracting bacause in creates a big black stripe through the middle of the image. One of the sailboat's masts is also underexposed and it disappears into the black background.
This looks like it would be a very difficult scene to capture. If you give the background hills the proper exposure, the clouds are overexposed. If you capture the clouds correctly, the hills are underexposed. You need to compromise. Maybe move the shutter speed a stop slower. This would still give you detailed clouds and also reveal some details of the hills. The hills will still be underexposed, but you could then fix them with photoshop. In your photo, the hills are so underexposed they have no color or details which makes them unfixable.

I like this shot a lot, but I think it would improve if you crop out the prominant green in the immediate foreground as the eye is drawn down there, and the eye looses interest in the hills or boats.
This shot works very well with the shape of the hills echoing in the shoreline, and contrasting with the flatness of the water (and waves.) The boats, floats and clouds add to the whole shot.

I agree with your own assesment - better light would have made the picture much better.
With the light you had I think you have got about the best you could. maybe a bit les foreground but its a matter of taste I think.
I have loads of pics that came out 'as well as they could' under the circumstances including some from Scotland. I dont think they, or yours, will ever be A1 class landscape pictures but they are not awful either.
