How can I actually do this? especially in low light situations, or is it not possible? it feels like i have to either focus on one person in front or the other behind, about a few feet/metre away... or is this literally to do with aperture?
Another thing, AI servo does that track focusing on moving subjects? Is that to do with things say a car, moving horizontally or does it include say kids moving towards you and from you? I tried doing a shoot with my mates toddler on a push bike but obviously it was getting out of focus as she was moving close/away from me.

saying that, i tend to use central spot focusing, so i lock focus and recompose... i feel that multi point doesnt seem to work as well

doesnt matter what focus point you use, depth of field is depth of field, and yours needs to be increased.
use a smaller aperture, and get the subjects closer together. maybe f8/f11?

Low light, you're not going to get F/8 nothing like. Not with out flash which defeats the object of low light/available light shooting
As Stu said, wide apertures means shallow depth of field. You need wide apertures for low light work you can't have people or objects that far apart in those conditions

You can try using the A-DEP setting to get the camera to set an appropriate aperture to get all of the focus points in focus, but as other people have said, it's not going to happen in low light (not wothout a flash, anyway). Get the people closer togther :)

I was gonna suggest the A-DEP settings. but as meantioned, ull need a flash for low light.
