PS Question B&W with some color

I am trying to take a color photo with multiple flowers in it and in PS7 create a layer in B&W and one in color. Then I want to erase all of the color layer except one of the flowers. I have seen this done and I like the effect. Any help would be appreciated

You have the right idea. Basically, you create a color layer and a b&w layer, then use the eraser or history brush to expose or paint one layer in another.
