I've taken a few hundred pics with my new G3 and I really like it.
BUT this low light focusing problem is really frustrating.
Please give me hope. Tell me there are some workaround ideas because I love existing light photography.

Do a search for Hyperfocal. That method helped me a lot.

Hyperfocal has a few limitations. The main limitation is that it gives best results when using a wide angle. As soon as you zoom in, the focal range reduces dramatically.
A technique I use occasionaly is to let the G3 find focus without pressing the shutter halfway, and then turn manual focus on. Usually I find the G3 found a good focus and there is no need to adjust the manual focus dial.
Now when you press the shutter halfway focus stays put.
What you may have observed is when you press the shutter halfway, the focus goes on an around the world tour. However, you may have been happy with focus just prior to pressing the shutter halfway.
