What is RAW mde in 10D actually means.

"RAW":

"This is an image format that saves the image as in when captured by the camera's imaging element. It is intended for image editing with a personal computer. Image compression, saving, and decompression feature lossless image quality. By using the bundled software's image-processing features, you can create the desired image characteristics." ---Canon

In other words, shooting saving RAW files is the best that you can get. From there, you can convert RAW down to JPEG or any other format that you need. However, if you shoot and save as JPEG, you can't go back to RAW.
