Which focus point to use?

Hello all.
I am taking photos of kitesurfers. I am using the center point to focus and have camera set on Al-Servo. I get a lot of out of focus shots.
Would I be better of using all 9 focus points and Al-Servo? Thanks for any suggestions or tips

is the subject on the centre point ?
could it be camera shake rather than focus?

Britt- Need a little more info re: lens. Tracking shots take a LOT of practice. Distance/speed/angle of approach have a lot to do with it. What camera model?
