EXIF is the TIFF header on a standard JPG file that tells you about your picture. EXIF means:
EXtraordinarily
Interesting
File
For all those great photos you take!

Previous post nailed it... it's just a standard to imbed LOTS of information about the captured image including fstop, exposure, camera model, focal length, etc...
