Not that I am contemplating doing any weddings in the near or even distant future, but to be able to apply the same methods with similar subjects, I was wondering what would be the best way to expose for the bride and groom with black suite and white dress. As these are both at either end of the scale and Dslr's can only manage a 5 stop difference.
I wondered would it be best to use an incident light meter for an average reading, or to use the historgram and keep the highlights to just within the rhs of the display, then bring up the detail in the dark area's with PS?

I would be grateful for your input how to combat this, particulary in bright sunlight. many thanks all.

I think you are on the right track. I think it would be better to not blowout the highlights, and to try and bring out the details in the dark stuff. I think the histogram is our friend in these situations.
