A friend of mine who work as a pro-photographer told me to turn off the sharpening in the cam, and use photoshop to sharpen it instead. Now I don't exactly see a way to turn off sharpening in the camera. I can change it from -2 to +2. It defaults to "0". What should I set it to? Let it stand at "0", or change it to "-2" ?

Let it stand at "0". Only the 300D has a +1 sharpening by default, the 10D hasn't.

I doubt that the camera blurs the picture intentionally. Hence, -2 will be either no sharpening or minimum sharpening. 0 is probably just your "normal" setting.

Set all parameters to "0".

Not according to this post (which links to another discussion):

Summary: On the 10D the -2 setting is the minimal sharpening level. 0 is simply considered to be a good sharpening amount by Canon with consideration for post processing. Only the 1D has a no sharpening mode.
