I'm relatively new to the camera, I will probably shoot just Jpeg (highest settings) for now until I learn more about the camera and it's capabilities. In Jpeg will I be able to utilize the 6.3 mp for those shots or will I need to shoot in raw to obtain the 6.3mp? If not will it still be noticeably better than my sony 3.3 mp point and shoot when printing from Jpeg formats?

The maximum image size for the 10D (and Digital Rebel) is 3072x2048 pixels.
Multiply length times width and you get 6.29 million pixels.
You have a choice of full size or smaller sized images in JPEG.
With RAW you only have the full size option.

Plus imbedded in RAW pic there is a JPEG, set by CFN 8, and you can choose any of the Small, Meduim, Large JPEG size in Fine or Normal compression. You can use it with the approx sizes in JPEG mode: Small 2MP, Med 3MP, or Large 6.3MP.
It is also worth noting, with the right glass, the results will blow you away!

In jpeg you will still be able to use the full 6.3Mp of the camera, make sure you set the size to Large to get that - large/fine for the best images.
When I first got the camera I shot everything jpeg, and regretted it. I got some great shots that would have really benefited from being a raw file, so if you have the memory, I would seriously recommend starting raw shooting as soon as you can.
The results will be better than your sony, but if you use a good lens the will be lots better :D

Some days I use RAW. Some days I feel like just messing around, and use JPEG, medium size format. Files are smaller, and quicker to work with on my out-dated, slow computer. How do I know that one of my messing around days won't produce one of my great pictures? Don't.

Large size jpeg file sizes will vary but will hover in the 2mb size. As your ASA goes up, so will the file size. (You did notice the counter change when you changed the ISO didnt you?)
I havent taken any at the highest ISO so I dont know the max.
