I would like to process some photo's where the main picture is in B&W and a feature is color (ie. eyes etc..) But I don't know what this is called to begin to search. Can someone point me in a direction for tutorial or information?

search on selective coloring. Make google your best friend for something like this.

the easiest and most basic way to do it, is to right click the layer, hit duplicate layer, make the upper layer black and white. use the erace tool with a soft edge, and erace out the black and white areas to show through to the colored one below.
the more complicated why is using Hue/Saturation layers and masking, but thats a bit complicated to explain.

good luck! its quite easy to do when you get your head round it! took me a while to get my head round it so persivere! :)
its well worth it.
