I connected my 1D to the firewire port to look into trying out the on camera
autosharpen with my 1D. But the setup is a bit overwhelming and I was
wondering if anyone here had either written a guide to the fields in the setup
software or has found something on the internet explaining how to use it.

I suppose it could be that it isn't worth trying and using unsharp mask in
Photoshop is much better but I thought I would give it a try. Any help would
be appreciated!

Gregg, avoid any additional sharpening in the 1D. You don't need a lot of sharpening even in post-processing. That is one of the good things about the 1D. Unlike the 10D it has a very weak AA filter which means the images are sharper out of the camera. The downside is you can get more moire.

If the images are not sharp out of the camera, then it is either the lens or camera shake.

For portraits use matrix 1 or 2 and for everything else matrix 3. I use 3 for my motorsport shoots and have hardly any post-processing to do other than cropping when needed.
