Away from my camera right now or I would try this but:

Is it ok to use IS while focus locking on a subject and then recomposing before taking the shot?

I haven't tried this yet but would the IS still find something to lock onto, or would I just have to choose a specific side AF point to focus onto and then shoot without recomposing (with IS on of course)?

IS doesn't lock onto anything, so it's perfectly fine to focus and recompose with IS engaged.
