when im in a sunny day setting, its basically impossible to shoot in manual mode, unless i have the shutter speed low i cant rally set a high shutter speed. any ideas on making things right in manual mode?

When you are shooting in manual mode - what do you have the F-Stop set at ? ...

f8 usually, though ive tried other settings.

Put it in P mode and see what the camera chooses, switch to M and use the same settings, go from there, make sure the ISO is the same.
