My Digital Rebel and C1 Pro Software just arrived!
Anyway, if I select the Adobe RGB parameter in camera (as opposed to the parameter1 or 2 settings), when I bring the Raw file into C1, should I setup the colour profile like this?

I haven't seen the C1Rebel, but if it's similar to C1LE, you should have a Drebel profile that you should select.
You might also like to check out the Ecetera Profile (http://etcetera.cc/pub/index.php/article/frontpage/1). They cost a small amount, but the D30 and 10D profiles are much better than those provided with C1LE. I would expect the 300Drebel ones to be just as good.

Yes, C1 Pro comes with a Eos300D Generic Profile.
However, would I be safe to assume that only would work if you use the standard parameters in the DREbel, not the AdobeRGB Parameter?

No, the profile will work for any setting. The colour space setting does not actually affect the raw file in any way. It is just saved as a tag (like sharpness, contrast, etc.) to be used as a default in Canon SDK based software.
Only the embedded JPG is affected by the camera settings for colour space, WB, etc. If you shoot raw and don't care about the JPG, you can effectively forget about the settings as C1 ignores them except for WB "as shot" which can be selected.
If you ever plan to use the JPG, I'd set sRGB and sharpness, saturation, contrast as you want, so the JPG can be used with the minimum of adjustments. You can do whatever you like to the raw.
In fact, I convert my raw files to the ProPhoto RGB. This is much larger than Adobe RGB and avoids any possibility of clipping colours.

I just tried using C1 Pro with my first Drebel shot. Very nice software.
