here is another i really like, let me know what you think please. i took my first stab at layers and changed the color of his head. his head seems to go red before his legs and arms in every picture.

iso 100
shutter 1600
f/6.3
500mm

a question for you also. i had been shooting at f/8-10 for added dof, since the surfer was oof if they did a big bottom turn. this session i had perfect light and cranked the iso down to 100 and shot at 6.3. the image quality is so much better with the 100 but i missed a few good shots due to oof. can someone share with me how they compensate for the big change in positioning? hope this makes sense.

The depth of field depends on the diafragm aperture (the smallest - the deeper), the focal lenght (the wider-the deeper) and the distance to the subject measured from the focusing point you´re using has some importance too, but since your subjects are all quite far, I don´t think this last parameter should bother you.
Since you´re subjects are moving, I suggest you should find the exact minimum shutter speed that allows you to freeze the motion (trial and error), therefore allowing you the minimum f stop value.
I think the Rebel handles ISO speeds between 100-200 quite well...that should help you too.
