I have seen in some posts talking about "focus stacking" on Photoshop. Taking multiple changes of the same picture and stacking them or merging them? Can somebody explain what this is used for and benefits of this

Focus Stcking is generally used for Macro photograhy. In macro the DOF is very small. To get a greater DOF photogs will take multiple pictures of the same subject but with different focus points. When stacked this creates an image that has a larger DOF. Check out the macro section stickies for more info, specifically posts from LordV.
