I have a question about sizing photos...once I get the photo the way I want it to look...do I adjust the size in photoshop? For example, I want to print a 12 x 36" print of a photo that is not proportionate to those dimensions...do I let the print shop make the adjustments or do I adjust the dimensions in photoshop first?

you might want to do a search on "image ratio" and "cropping"..
You'll have to crop out an image with a 1:3 ratio from the original (which is 4:3 on your S2), and then up-sample it depending on what resolution the image is at.. do a search for "ppi" and "sampling" for more on that subject.

I would be tempted to at least get it the correct aspect ratio (3:1) so you know how the crop will affect anything in the image (chopped off heads/arms etc.)
At that size, I bet the lab would do a better job of up sizing than you or I could? (depend on the lab though...)
As others have said - ask them first
