Does PS7 not have an Undo Button, or am I just not seeing it?

Mouse to Edit\Click\Mouse to Step Backwards\Click, Mouse to Edit\Click\Mouse to Step Backwards\Click, Mouse to Edit\Click\Mouse to Step Backwards\Click, Mouse to Edit\Click\Mouse to Step Backwards\Click is much more of a hassle than Mouse Undo Button\Click\Click\Click\Click

Just because 7 has a greater functionality, does that mean that it needs to be harder to use than E for no other purpose than being harder to use?

if you mean to undo a mistake, its CTRL+Z. but it only gives you 1 undo that way... if you select EDIT > UNDO you can do 20 by default, but you can set it higher in PREFERENCES > GENERAL..

you should also have a "history" pallette where you can go back as many times as you have specified in the preferences.
You can turn the pallette on by clicking on "window/history"

Go to "edit/preferences/general"
You will find a small box that says "history states", if you type in 50 - you will be able to undo the last 50 things you did.

Shift+CTRL+Z will undo in steps, and Alt+CTRL+Z will redo in steps.

CTRL+Z will toggle undo and redo.

At least that's the way it is in CS. I think 7 is the same.

Check preferences (edit|preferences|general).

The setting for the "redo key" controls how CTRL-Z and CTRL-Y work (as toggle or non-toggle keys). In PS 7 I have mine set to: "Redo Key: CTRL-Y" which allows successive undos or redos with each keystroke.

It's not obvious from the choices what the resulting effect is, so you have to experiment.

You have them backwards. CTRL+ALT+Z will undo in steps. Shift+CTRL+Z will redo in steps. You can also go to your history palette and select the spot that you want to start over from.
