I just got my 300D and have started to work with PS2 that came with it.

I would like to know if there are any good books or sites that will explain and show examples of what can actually be done with this program.

I believe you mean Photoshop Elements 2.0. Try Scott Kelby's book, "Photoshop Elements for Digital Photographers."
