Backdrops - what colour?

So, I'm setting up my indoor studio and I have ordered two backdrops.
Both are 10ft by 24ft. THey are fairly good quality, one is a sable sand colour and the other is black cherry. I want to get a white as well.
What colour of backgrounds would you recommend?

I just do black and white, really. I gel the background light if I want another color. Also, if it's just a head and shoulders portrait, I'd use the 5x7 Botero collapsibles for around 1/4 the cost of the big ones, and they don't get wrinkled.
