Just curious!

If you will be panning the subject, does it change?

Yes, and I leave the lens cap on and hold the camera with my feet.

With my big FD glass I am usually in Av mode, possibly with exposure compensation.

With any of my EF lenses, P mode, Tv or Av and I might dial in some exposure compensation.

Have Fun,

I use AV with AIServo, center point focus, fast enough to either stop action or some times drag the shutter for slight blur on the wheels. ISO to suit. Prior to shoot day, tons of tracking practice.

If you ever get any spare ham sandwiches you can throw them at me. :D

when were at the drags there is always loads of ham sandwiches left over as we always stop by the pastie wagon ( at the pod) or the hog roast stand (at shakey) we realy should learn never mind

For panning, slower shutter speed depending on the subject, angle, and how much blur you want. Focus typically on AI Servo. It depends a lot on the subject and the angle. Let us know what you're taking pictures of if you want more detailed info.

Mmm... Ham sandwich.

AI servo to focus, & "M" everything else.

It all depends… how’s that for an answer?

First off, all the “always settings”. I will always use AI Servo AF and either a single or two active focus points. The AF point will usually be one of the lower points, and sometimes off-centre left or right.

In difficult lighting I will use “M” (manual) exposure mode. Difficult lighting includes harsh sunlight, rain, cars running with headlights etc. In more even lighting I will use “TV” (shutter priority) mode and let the camera do some of the work.

It should also be noted that real motorsport 'togs do bacon rolls, NOT ham sandwiches :p ;)

I always use shutter priority mode, and I have brown sauce in my bacon rolls :)

Hmmm... Perhaps this is why I have been getting a lower return rate recently. Teach me more.... ;)

...bacon rolls! I'll try Adorama, 'cause I suspect that the guys at B&H don't sell them?

I would suggest trying Jessops, but the staff wont know what they are or how to use them, they wont have any in stock, you'll have to wait 5 weeks to get one, and then it'll cost you £500 more than the place down the road. :( ....and I bet it'd be cold too.
