I wanted to get some feedback on whether or not the default settings in the 30D should be changed. Saturation, sharpness... etc.
What has worked best for you? I will be shooting alot of sports and theatre.

Im also interested in what general opinions are. I suppose if you're shooting RAW it doesnt matter?

They're preferences so you should set them how you...ahem...prefer. I use "Standard" since that's the only common setting to both my older 10D and my newer 30D. I also shoot RAW so they get the same treatment via DPP.
Just play around with 'em and see which you like better. You might even change them depending on your subject if you're shooting JPEG.

If you use DPP then I believe those settings are "applied" to the file, as a starting point...So if you user "Neutral" picture style, that's what it will set it to in DPP...
Im also interested in what general opinions are. I suppose if you're shooting RAW it doesnt matter?

I bumped up the sharpness +1 and the saturation +1. I use DPP for my processing and the camera settings are retained with the RAW. I find with these settings, I rarely make any changes, just convert them to TIFFs for processing.
Many complain about DPP, but time and time again it has proven to give me the most brilliant/vivid images with little to no adjustments. I used to use RSE alot, but found myself spending a tremendous amount of time making adjustments, and to be honest, too much flexibility with image adjustment can lead to image degredation. Just my two cents.

i shoot everything in raw. and the settings are all at 0 !
But then of course, I post process them all after I run them through adobe lightroom.:D
to me that's the easiest way to go. and that was advice from a professional fashion photographer I know.

A lot of good advice is already given, just wanted to add that the in-camera settings could vary with your lens. Say your lens has a soft-focus "problem". You could then i.e increase sharpening settings and colour balance if you prefer. I was shooting jpeg with my 17-85mm which sometimes had a soft-focus problem. Afterwards it worked better at the smallest appertures. Finally I have concluded that this lens works best when shooting in Raw-format and then the in-camera settings don't matter at all as all settings can be adjusted easily afterwards in DPP
