I just recently got a sigma 500 f4.5 prime.I do mostly birds and wildlife.Also,birds in flight.What would be a good stable,fast setup for these conditions.Thanks in advance.

Maybe the Manfrotto 681? I know it can support a lot, for head, I'm not sure, a lot of the heads that support a ton of weight are quite big, maybe too big for a monopod.

Manfrotto Neotec .. super fast set up and strong with it. Head I dunno because I can't be bothered checking the lens weight. Not sure if it is too heavy for the Manfrotto 488 RC2.

What about the quick realease head? Are those worth it?

Oh Yeahhhhhh! Much faster setup and takedown as well as more convenient lens changes (especially with long lenses and tripod rings). By all means, get a QR.
