Does anyone know if there is much difference in image quality between the Large/Fine vs. Medium 1/Superfine vs. Medium 1/Fine settings. I have a 512 MB card and want to maximize the number of available pictures I can take without minimizing image quality too much.

I know this may sound crazy  , but why don't you take a few pics in each mode and find out?

What image size is going to fit your needs best? Go from there...

It's all subjective as to what is "acceptable"

You'll need to do some testing on various subjects, then compare the resulting quality. Then you can make your own judgement call.

Your manual likely provides a table of how many images could likely fit on your card given the pixel dimensions, and compression rate.

Most people go for the best image quality and down load when required.
Loosing one level of compression quality is usually better than loosing one level of pixels dimensions.

id suggest shooting the higest quality possible so that when u go to print, the images look at nice as they can...

i shoot my s400 in superfine mode, primarily because u can always down size but u cant ever go up in quality...
