I recently bought the Canon SD900 which does NOT have Image Stabilization. I'm wondering if I might have jumped in too soon. I'm wondering if Canon is now going to come out with the SD900 IS model. I think they did that with the SD700.

I wouldn't worry about that. A quick check of Canon's site does not show a 700 without IS.
Incidentally, IS is the reason I bought my daughter a 800 IS instead of the 900.

How good is the IS on these Elphs? I am looking for a compact when I don't feel like lugging my Rebel around.
Can you turn the IS on and off? Anybody got examples of shots with and without the IS?
Canonphotog-how does your daughter like that cam?
Also - do any of the Elph size cameras use CF?

Yes, you can turn off the IS. Great for when you want to take action shots.

My daughter loves the 800 IS. As far as elphs and CF cards..., I don't think any of them do that. I bought her a 2gb SD card for it. She never runs out of room. When she used my G3, she was always taking blurry photos. (not holding still enough and stabbing the shutter button) With the 800 and IS, I've yet to see an bad image due to motion blur. (camera motion)
Don't forget that they also do a pretty decent job of .avi movies. Makes it a little more interesting when visiting zoos, aquariums, etc.
