I've looked but can't find the answer
How do I turn it off?

Can you de-select it in the Structure Editor?

I can turn off the link to it. Is that enough to disable it?
Edit: No it still has another link at the bottom of the entrance page to all the exhibitions

How about in the Structure > Links section, there seems to be the option to delete the Guestbook and associated link

I did that but it still leaves a link at the bottom of the exhibition entry page (list.php), but I got rid of that by editing the php of that file.
I'm suprised that there is no way of just turing it off golbally. I assume that the guestbook page still exists and that someone could in fact find it and use it.

turning off the link (ie: removing the link from pages) does not turn off the function... it may be possible for spammers to directly access it with prepared entries... i've not tested this but i do see regular hits on my site for files that spammers are assuming are present by the strings they run on search engines... i've seen more than one that comes in from searches done on google that is going after something they think is available... (ie: my arcade in my phpbb is a newer version than what they are expecting and the php file they are trying to access simply doesn't exist.) many spammers and their scripts are extremely ignorant and that's about the only saving grace for any website that doesn't set up and operate in "standard" ways (ie: don't run iis in wwwroot since that is something specific they go for... by the same token, don't install windows to winnt or similar default because it is known and easily exploited if they can get in by some means.)...

I deleted the page, so it's sorted (the inelegant way)

Remember that there are more pages with links to the guestbook (like list.php)
