What is the best setting for the Digital Rebel? I use Adobe 1998 in PSCS should I use Adobe 1998 on the camera? I find that custom settings often look a little more crisp. I'm stuck.

If you are shooting JPEG, use Adobe RGB if you've also set PS CS to Adobe RGB. If you're using RAW, it doesn't matter what color space you set in the camera, because you will determine at the time of RAW conversion which color space you're going to use. Also, all the other settings (saturation, sharpness, etc.) have no effect on the RAW image - only on JPEG images.
What settings are best, is something you have to find out for yourself - there is not one "best" setting that works for everyone, otherwise there would be no point in being able to change the settings.... :? Just try making the same photo with different settings to find out what you like best.

When you use Adobe RGB, you can't set other parameters (color, contrast, sharpness, tone). There is no advantage to shooting JPEG, sRGB in the camera and the working in Adobe RGB in PSCS. You can't add back color gamut that wasn't captured in the camera. Only shooting RAW allows you to view the file using different color spaces and actually benefitting from it. If you want to shoot JPEG and get the benefit of the wider color gamut of Adobe RGB, you have to shoot with Adobe RGB assigned in the camera.
