Ok so moving to a two page spread means that I will have to leave a few printer companies behind. But how do you ensure that the seems line up. Must I go to a flush mount? Can I still use asuka type books?
I feel a little stupid since I have a 10x10 book and don't know where to get a flush mount version printed.

It would probably help if you told us what company you actually wanted to use. With Asuka they provide the templates for you - complete with guidelines.

Avoid having important stuff (like faces) in the middle on Asuka books. You will lose some of th eimage when they bind it.

True - but the templates will show you exactly where the gutter will be.

David, it seems you're making some assumptions and you're not explaining yourself well. Best start again and tell us what you're trying to achieve.

What I want to achieve is for them to see what you see in the OP. With a flush-mount I'm sure to get that. But with a binding like asuka it will cut right between the bride and the Elvis-alike. Which I think is ok. I have not made an asuka, so I am unfamiliar with how this would show.
So if you have made an asuka or similar book with a dual page spread, where you happy with it? What are your concerns?

if you go with the Asuka stitch mount there is only about 1/8 in or less loss without cropping the pages. (unless it is the center page, then there is just row of stitches no cropping) if the center is not something like someone's face you won't notice the loss. The book bound versions on the Asuka books you lose more like 1/4 in. But if smartly positioned, again, it will come out nicely. The templates do show you the guidlines.
