I know you guys all Love Canon, but there is always a debate going on which of these two are better, whats your opinon, and why would you choose one over the other?

Anyway ...
It isn't totally fair to compare the two cameras (check their price tags). That said, people do, which only highlights how good the 30D is.
I've played with a D200 and it's pretty nice to use. But I still prefer the feel of my 30D's (probably only because I'm used to them). Also I believe Nikon's noise control is still profoundly inferior to Canon's.
Apart from that, the D200 is a good camera if you like the Nikon system. I'm certainly not planning (or even hoping) to switch anytime soon.

i used to own d200 i own 5d now which at some point is very similar to 30D .... d200 has professional body and feel .....all functioons are easily accesible ...software is great ..you can custom adjust anything you want ..i still don't get why canon doesn't have auto iso for example ...but overall i am happy that i have switched ...i like canon's IQ better

I've shot a D200 and a 20D side by side and there's barely any difference. Price is a big one, you can get a 30D and a lens for the same price as just the D200 body. The weather proofing is another, but my camera has seen A LOT of water and it's been great. And the difference in megapixels is pretty much non exsistent. The only difference for me is that Canon's in general deal with noise much better than any Nikon I've used. Other than that, go with what you're most happy with and we (well me at least) won't discriminate if you choose against our preference.
