I saw on another forum that someone stitched a pano together using photoshop. Anyone know how to do this? Also what are some other programs that are used for stitching that migh be better than photoshop?

It's called Photomerge. Go to File | Automate | Photomerge. If you do not how to use it then try the manual or go to F1-Help and type in "photomerge" in the search field. Too much info on this tool to type it all up here :-)
Try looking at Autostitch, Panorama Factory, PTGui for Panorama Tools, Photostitch (which comes free as part of EOS Solution Disk).

yeah I found out about photomerge shortly after I made the thread, I have been running into problems though when trying to merge photos. Always get a ram error saying that my system does not have enough ram. This only happens when i'm working with seriously super huuuuge files. I guess shooting with 5d and trying to merge 15-20, 12 megapixel images together isn't such a good idea.

Adaptive, I shot panos with a 1Ds Mk.I, not unlike you 5D image size. My 180 panos usually are 25 images wide. CS3 cant do it.
I must close all programs and run Panorama Factory. It takes some time but it does it. I have a dell XPS m1710 with 2 gb of ram. Panos are serious hardware hogs. I prefer this program since it can create error free panos. CS hasn't pulled it off yet.

CS3's photomerge is vastly superior to CS2's. I wouldn't even bother using CS2's photomerge.

If PShop CS2 or CS3 does not meet your needs, try AUTOPANO PRO at http://www.autopano.net/.
It is a FANTASTIC stitching program that now supports HDR.

I haven't had good results from the CS2 Photomerge, but Canon's Photostitch has worked very well for me in virtually every instance.
