For wedding poses, we say:

"OK, smile at the camera, on the count of three.

One, two...

(snap)

I lied."

But that only works once.

"Ok, Everybody say: Supercalifragilisticexpialidocious"

Or, for Monty Python Fans....
"OK, Everybody say: Ni"
or
"Ok, Everybody say: Ecky Ecky Ecky Bekang Zoo Boing Zowegien"
or
"Ok, Everybody say: SPAM SPAM SPAM SPAM SPAM SPAM SPAMITTY-SPAAAAAM SPAM SPAM."

Wow, that's the first time I've ever seen anyone other than myself spell Supercalifragilisticexpialidocious correctly.

Anyway... Here in Hong Kong, we all use "Yat, Yee, Saam" when taking photos. But then that's just "One, Two, Three" in Cantonese, so maybe that's not really helping.

How about "Yat... Yee..." expression of befuddlement, scratch head, look at note in pocket, exclamation of joy, "Saam!"

This might work better for speakers of Cantonese, but I think the gestures should translate to other languages...

Scottes, that sounds exactly like my friend in Japan who tried to learn how to say that when he was taking our picture!

For group shots at Weddings I have said "OK everybody Blink", and for some unknown reason nobody does.
My favorite is the same one Robertwgross uses. For the record, hopefully only once is all you need. On three now......... One, two,

Or, if you are a little north of Hong Kong, "Yi, Er, San.."

Works for Kids: Say "I really, really, really hate having my picture taken"! Wait for the smile.

One strange photographer at my friends' wedding made the fully adult crowd yell "vagina". That got some really good smiles and looks. 8)

I photograph children and little league teams and find Daddy/Coach has stinky feet to work. As does say chicken lips, turkey gizzards, and various other poultry body parts. And let's not forget that adorable "say cheeseburger". All young children seem to say cheese booger and if you ask them if they just said booger well...Read your customer first. If they're a little shall we say up tight boogers and stinky feet won't work.
