I'm confused! I cant seem to fathom which I need to get.

I dont even have a single flash, yet... but I want to know for as soon as I do to be able to go out and buy some wirless triggers and recievers.

I've been looking on eBay, some buyers say they're compatible with all cameras, and then others (showing the same product) say they're not compatible with Canon's?

Anyone care to explain, in laymans terms, what I need to get?

With my small amount of knowledge:

You need to get both for off-camera flash (such as the Canon 580ex or 430ex). The trigger goes on the camera (hotshoe mount above the viewfinder) and the reciever on the flash.

I ordered a Cactus V2 Wireless kit (http://cgi.ebay.com/Cactus-4-Channel-Wireless-Flash-Trigger-V2_W0QQitemZ170124513554QQihZ007QQcategoryZ64354QQ ssPageNameZWDVWQQrdZ1QQcmdZViewItem) (4 channel) the other day. This comes with both, and is adequate for what you're asking.

Have a read through THIS THREAD (http://photography-on-the.net/forum/showthread.php?t=316948&highlight=Cactus+V2) for more info on that flash transmitter/reciever setup, should give you some insights.
