Well let me start off by telling a little about myself. I am 28 and I have a wonderful 9month old son (Hunter). I am currently going through a divorce and was looking for something to pass my time and keep my mind @ ease so I chose photography.
I puchased a Canon xti rebel with the 18 55 lense a few days ago. I am going to take my son out tomorrow to try and get some outdoor portraits and not sure where to start. Any pointers on manual settings would be helpful..Just a few pics of my son and myself..

From shot #2 (Crawling) you seem to intuitively have one of the most important lessons already learned: Get down to your subjects level.
I can't tell you how many baby/dog/cat/iguana/duck/etc shots I have seen here taken from standing adult's eye level. We ALWAYS see babies/dogs/cats/iguanas/ducks/etcs from standing adult's eye level. To enter THEIR world is task 1 for a decent photographer.

These pics look good actually.
Your son is adorable!
When you are shooting outdoors, stopping down the kit lens will yield better IQ, however from the looks of things, the IQ is just fine!
