I bring my photos from my g5 to a local photography store to have them developed. They always cut some of my pics from the side and I often lose parts I want to keep in the photo. I would rather crop them to the right size and ratio myself in photoshop. What size and aspect should I give to them so nothing more will need to cropped at the store.

Just check the images out in photoshop. Use image size and canvas size to get the right proportions for the photo you want. If you plan on getting a 5X7, then open your image in PS and make the image dimensions 5X7. Then save THAT new image file and take THAT one to get printed at your local store. Don't get anything printed from that file other than 5X7 though, or you may be subject to some clipping off.
