looks good. sometimes blowing the sky out cant be helped. especially if the sky is already grey (which seems to be the case nearly everyday here in scotland)
wouldnt you much rather have details on the main subject than having a beautiful sky. especially if you can do stuff like that with PP. i know its time consuming but the end results are worth it.
you did a good job with that. out of curiosity, how did you go about doing it.

it does look good, even around the trees, which is normally the first sign "trouble" ;)

Perhaps desturate the blue a little, otherwise a great job especially aroud the trees.

there's a bit of a halo around his head, especially on the top. Might need to fix that. Also, as the focus of the tree's are trailing off into OOF, you might need to make the sky more out of focus, as it's even farther away than the tree's.

Sorry, but they do look fake to me. . . with the exception of this one . . . but as you say, thats cause its a genuine capture at the same time of the photo.

principle reason is the lighting on the clouds doesn't match the lighting in the scene in terms of direction and brightness . . . also, i think the sky its too dark and saturated . . .
even just lightening up the sky in the first picture makes the whole thing look more beleivable personally . . . .

Your best bet is try to get it right at the start .. shoot RAW to get a couple more stops latitude, expose for the background less a stop, and use the ETTL to properly expose the couple.
Your skies as posted look fake .. and that will probably get worse when printed.
