Does anyone know how and what its called when you join loads of frames together to make something move like a sock or something without someone actually moving it.
Do they do this with a camera or video camera and what do they use to make it final cut? flash?

Looks like stop-motion indeed.
It can be done with a video camera (some models even have a stop-motion feature, allowing to film only for a preset lapse of time) and then be further processed by conventional video editing means (editing table, software).
One could also use a photo camera and then stitch the frames together with software, Flash, Quicktime, etc. or even programs made specially for this purpose.

You could even staple the pictures together and videotape the flipbook! :D
