I mainly use elements 5 for editing, what is the best way to say leave a bouquet in colour and the rest of the pic in black and white? Thanks in advance.

I copy and paste. Change the pasted copy to BW then use the eraser tool on the bouquet - change the opacity as desired.

One thing I recommend is that you be very careful to make a precise selection because if you do not, it doesn't look professional. After I learned all about PS and editing, I went back through the pictures of my wife's bridal photos and saw where this effect was used. The selections were not precise enough and I looked a bit closer at the final prints and I could tell from there. Or maybe I am too picky.

use an adjustment layer and mask out the area you want in colour

Agreed. But for some reason, brides still request it.
